Apple & Walnut Flatbread
What you will need:
1 Flatbread, store-bought
½ Gruyere, shredded
1 Red Apple, thinly sliced
4 Slices Prosciutto, cut in half
¼ Red Onion, thinly sliced
6 Fresh Basil leaves, torn into pieces
2 Cups Arugula
Kosher Salt and Freshly Ground Black Pepper
¼ Cup Walnuts, chopped and toasted
Flaky salt to finish
Preparation:
Preheat the oven to 375 degrees F. Cover a baking sheet with parchment paper.
Spread your cheese over the flatbread evenly. Spread the sliced onion over the top, followed by the slices of apple. Bunch up small bundles of the prosciutto and place randomly over the flatbread.
Place on the prepared baking sheet and put in the oven for 20-25 minutes until the cheese is melted and everything is hot and toasty.
While the flatbread is in the oven, mix the olive oil and vinegar with a large pinch of salt and black pepper in a small bowl. Add the arugula and toss to combine.
In a small frying pan, add your walnuts and toast over medium high heat for 2-4 minutes tossing occasionally and watching carefully so they don’t burn. Put in a bowl to cool.
Remove the flatbread from the oven. Top with the torn basil leaves and toasted walnuts. Add the dressed arugula on top and finish with some flaky salt. Cut into four pieces and enjoy.
