Mango Coconut Quinoa Salad⁠
What you will need:⁠
2 cups quinoa uncooked⁠
1 cup fresh mango chunks⁠
1/2 red onion diced⁠
1 red pepper diced⁠
1/2 cup cilantro chopped⁠
1 1/2 cups shredded coconut⁠
3/4 cup slivered almonds⁠
1 Avocado sliced⁠
2-3 cups frozen edamame thawed⁠
Juice of 5 limes⁠
3 Tablespoons Patricia & Paul Coconut White Balsamic Balsamic Vinegar⁠
3 Tablespoons Patricia & Paul Persian Lime EVOO⁠
Preparation:⁠
In a medium saucepan, cook quinoa according to package instructions.⁠
In a large bowl, combine quinoa, mangoes, red onion, red bell pepper, cilantro, coconut, almonds, avocado, edamame, lime juice, olive oil and balsamic vinegar.⁠
Serve immediately. Store in the refrigerator in an airtight container for up to 5 days. This salad can also be served cold.
