Mango Coconut Quinoa Salad
What you will need:
2 cups quinoa uncooked
1 cup fresh mango chunks
1/2 red onion diced
1 red pepper diced
1/2 cup cilantro chopped
1 1/2 cups shredded coconut
3/4 cup slivered almonds
1 Avocado sliced
2-3 cups frozen edamame thawed
Juice of 5 limes
3 Tablespoons Patricia & Paul Coconut White Balsamic Balsamic Vinegar
3 Tablespoons Patricia & Paul Persian Lime EVOO
Preparation:
In a medium saucepan, cook quinoa according to package instructions.
In a large bowl, combine quinoa, mangoes, red onion, red bell pepper, cilantro, coconut, almonds, avocado, edamame, lime juice, olive oil and balsamic vinegar.
Serve immediately. Store in the refrigerator in an airtight container for up to 5 days. This salad can also be served cold.
