Arugula Salad with Grapefruit and Parmesan

A classic arugula salad gets a citrusy twist with a dressing of Herbes de Provence Olive Oil and Grapefruit White Balsamic. And of course, don't forget the Parmesan for that salty kick!
Arugula Salad with Grapefruit and Parmesan
What you will need:
4 Cups arugula
1 Grapefruit, segmented
¼ Cup Parmesan shavings
Cooked shrimp, prepared in your favorite way(can also substitute with chicken or steak)
Dressing
⅓ Cup Patricia & Paul Herbes de Provence Olive Oil
⅓ Cup Patricia & Paul Grapefruit White Balsamic
1 Tsp. Dijon mustard
Salt and pepper, to taste
½ Clove garlic, minced
Preparation:
In a bowl, arrange arugula with grapefruit segments, shrimp and Parmesan on top.
Dressing
Whisk together all dressing ingredients in a bowl, or blend in a food processor.
Drizzle the dressing over the salad and enjoy!
