Pomegranate Sparkling Cocktail

What you will need:

Fresh pomegranate seeds, about 1 Tbsp per drink

2 oz. Patricia and Paul Pomegranate Quince White Balsamic

Champagne, Prosecco or other sparkling white

Mint

Granulated Sugar

Preparation:

To remove pomegranate seeds, cut the pomegranate in half, flip the pomegranate cut side down over a bowl. Take a large wooden spoon and begin hitting the back of the pomegranate repeatably. The seeds will loosen and fall out. Continue until all the seeds are out.

Makes 1 cocktail. Pour sugar onto a plate. Wet the rim of your glass, flip it over and place into sugar to coat the rim with the sugar. Add about 1 tablespoon pomegranate arils to a champagne flute. Add the balsamic and top off with sparkling wine. Add mint to garnish. Serve.
