Mango Coconut Lime Ice Pops

What you will need

Preparation

  1. Peel and roughly chop the mango. Place it in a saucepan over medium heat with the sugar and balsamic.
  2. Bring to a simmer and allow the mango to soften, 5-7 minutes, stirring to ensure an even cooking.
  3. Remove from the heat and allow to cool to room temperature.
  4. Place the mango mixture and lime juice in a food processor or blender and blend until smooth. Pour into molds or small paper cups, and place ice pop sticks in the middle of each mold or cup.
  5. Freeze for at least 6 hours.
  6. To remove the ice pops from the molds, dip the molds/cups in near boiling water for 5 seconds, remove and then slowly remove the ice pops.
  7. Enjoy immediately, or wrap any leftovers in parchment paper, place them in resealable plastic bags, and return to the freezer.
