
Mango Coconut Lime Ice Pops

What you will need
- 1 Large or 2 small mangos
- ½ cup granulated sugar
- ¼ cup of Patricia and Paul coconut white Balsamic Vinegar
- ¼ cup lime juice (2-3 limes)
Preparation
- Peel and roughly chop the mango. Place it in a saucepan over medium heat with the sugar and balsamic.
- Bring to a simmer and allow the mango to soften, 5-7 minutes, stirring to ensure an even cooking.
- Remove from the heat and allow to cool to room temperature.
- Place the mango mixture and lime juice in a food processor or blender and blend until smooth. Pour into molds or small paper cups, and place ice pop sticks in the middle of each mold or cup.
- Freeze for at least 6 hours.
- To remove the ice pops from the molds, dip the molds/cups in near boiling water for 5 seconds, remove and then slowly remove the ice pops.
- Enjoy immediately, or wrap any leftovers in parchment paper, place them in resealable plastic bags, and return to the freezer.
