Cranberry Pear Chicken Salad
What You Will Need:
1 pound shredded chicken (about 2 cooked chicken breasts)
1 diced pear or apple
1 diced nectarine or peach
1/2 c chopped walnuts
1/4 c chopped red onion
1/2 c fat-free feta cheese
1/2 tsp kosher salt or to taste
Mix together and set aside:
1 Tbsp Patricia & Paul Persian Lime Infused EVOO
4 Tbsp Patricia & Paul Cranberry Pear White Balsamic
2Tbsp course grain Dijon mustard
Cook, shred chicken breasts.
Chop all fruit, nuts, onion and mix with chicken in large mixing bowl.
Toss in feta and vinaigrette. Serve.
