Breakfast Sandwich

What you will need:

½ lb extra thick bacon

2 eggs

Aged cheddar cheese

4 slices rustic bread or 2 ciabatta buns

2 Tbsp Patricia & Paul Tuscan Herb infused EVOO

1 avocado, sliced

1 large tomato, sliced

Sea salt

Preparation:

In a large frying pan, cook the bacon until crispy. Place it on paper towel to absorb any grease, and set aside.

Leave about 2 Tbsp of the bacon grease in the frying pan. Fry the eggs in this grease over medium heat, breaking the yolks to let them cook fully.

Place the bread on a cookie sheet and preheat the broiler. Drizzle each piece of bread with the olive oil and top with the two slices of cheese. Toast under the broiler until the cheese is melted and just starting to bubble.

Top two slices of the bread with bacon, a fried egg, and slices of avocado and tomato. Finish each with a sprinkle of salt and another slice of tasted cheesy bread. Serve immediately
