Baked Oatmeal

What you will need:

1 apple (any type)

2 cups quick-cooking oats

½ cup raisins (any type) or dried cranberries

½ cup chopped walnuts, divided

1 cup 2% milk

1 Tbsp Patricia & Paul Red Apple dark balsamic vinegar, plus more for drizzling

2 Tbsp brown sugar

Handful of Blueberries

Greek yogurt, to serve

Preparation:

Peel and core the apple and chop it into bite-sized pieces. Place the pieces in a 9-inch pie plate or cast iron pan with the oats, raisins/cranberries, and ¼ cup of the walnuts, stirring to combine. Pour the milk and balsamic into the pie plate, add 2 cups water, and gently stir to combine. Cover with plastic wrap and place in the fridge overnight.

In the morning, remove the plastic wrap and preheat the oven to 350F.

Bake the oatmeal for 20-25 minutes, until all the remaining liquid has been absorbed, the oats are soft, and the top is golden.

Cut into slices and serve hot with the remaining walnuts, a sprinkle of sugar, a drizzle of balsamic, and a dollop of Greek yogurt.
