Simple Breakfast Omelet
What you will need:
2 Tbsp Patricia & Paul Wild Mushroom & Sage infused EVOO, divided
¼ cup chopped button mushrooms
1 Tbsp chopped green onions
1 Tbsp chopped fresh curly-leaf parsley
3 eggs
2 Tbsp grated white cheddar cheese
Preparation:
In a small omelet pan, or 8-inch frying pan, warm 1 Tbsp of the olive oil over medium heat. Sauté the veggies in the oil under just tender.
Beat the eggs with the remaining 1 Tbsp of olive oil and pour them over the veggies. Let cook 1 minute, sprinkle with the cheese, and fold the omelet in half. Let is cook for another minute before serving.
For a different spin, replace the button mushrooms and Patricia & Paul Wild Mushroom & Sage infused EVOO with the following combinations (in the same volume):
Bell peppers + Patricia & Paul Chipotle or Harissa infused EVOO
Diced ham or chicken + Patricia & Paul Rosemary infused EVOO
Smoked salmon, shredded + Patricia & Paul Wild Dill infused EVOO
Spinach + Patricia & Paul Herbes de Provence infused EVOO
Tomatoes + Patricia & Paul Tuscan Herb infused EVOO
Zucchini + Patricia & Paul Milanese Gremolata infused EVOO
