Three bean salad

What you will need
1½ cups canned chickpeas, rinsed anddrained1 cup canned red kidney beans, rinsed anddrained1 cup snapped green beans, cooked andcooled1 Tbsp chopped chives1 Tbsp finely chopped fresh flat-leaf parsley¼ cup Patricia & Paul Garlic infused olive oil¼ cup Lemon Juice

Preparation

Toss the chickpeas and kidney beans in a large bowl with the string beans and sprinkle with the fresh herbs. In a small bowl, whisk together the olive oil and lemon juice. Drizzle this dressing over the salad and toss well to coat. Let sit, covered, in the fridge for at least 1 hour before serving to allow the flavors to develop.
