Smashed Parmesan Potatoes

What you will need
2 lbs small baby red or yellow potatoes
4 tbsp Patricia & Paul Garlic infused Extra Virgin Olive Oil 
1 tsp pepper
¼ tsp garlic powder
¼ tsp onion powder
2 tbsp chopped fresh parsley
½ cup shredded parmesan cheese

Wash and scrub potatoes clean. Cover potatoes in a large pot of boiling water until fork tender. Preheat the oven to 425f while potatoes are cooking. Spread 1 tbsp olive oil on a baking sheet. Drain potatoes and spread out evenly on a baking sheet. Gently ‘smash’ potatoes with back of fork or bottom of glass cup to flatten. Top with remaining olive oil, seasonings (except fresh parsley) and parm cheese. Bake for 25 minutes until crispy. Top with fresh parsley and additional cheese if desired.
