LOADED FALL HARVEST SALAD WITH BALSAMIC DRESSING

INGREDIENTS
For the salad:
8 cups red lettuce
8 cups kale
2 medium honeycrisp apples – sliced thin
1/2 large lemon – freshly squeezed
1/3 cup red onion – sliced thin
4 slices bacon – cooked and crumbled
4 oz. goat cheese – crumbled
1 1/2 cup toasted walnuts
For the dressing:
2/3 cup P&P Arbequina evoo
3 tbs P&P cranberry pear white balsamic
1 tbs dijon mustard
1 tbs honey
1/2 tsp onion powder
kosher salt and freshly ground pepper – to taste
INSTRUCTIONS
Toast walnuts. Cook the bacon according to your
desired method. Crumble. Slice apples into thin
slices. Squeeze lemon over them to ensure they
don’t brown. Make dressing. In a mason jar, combine evoo, balsamic, Dijon mustard, honey, onion
powder, salt, and pepper.
Arrange salad ingredients in a large bowl – the
salad greens, red onion, goat cheese, crumbled
bacon, candied walnuts, and apple slices. Serve
with the prepared balsamic dressing
