LATE SUMMER SALAD WITH TOMATOES, CORN & PEACHES

INGREDIENTS
about 4 cups lettuce
1 pt. cherry tomatoes, halved
2 peaches, sliced
1 ear of raw corn, with the corn sliced off
1 avocado, sliced
For the basil dressing:
3 cups loosely packed fresh basil leaves
3 Tbsp. P&P peach white balsamic
1/4 tsp. salt (or to taste)
1/4 tsp. pepper
1/4 cup P&P basil infused olive oil
INSTRUCTIONS
Place the lettuce in a large bowl and top with
the cherry tomatoes, peaches, corn kernels,
and avocado.
To make the dressing, combine the basil,
balsamic, salt, and pepper in a blender. Pulse.
Turn the blender on and stream in the olive
oil. Taste to check the seasoning level. Pour
the dressing over the top of the salad and
serve!
