What you will need:
4 potatoes (pre-boiled)
2 large beets (pre-boiled or roasted)
Patricia & Paul Lemon EVOO
Patricia & Paul Champagne vinegar
6 cloves garlic
1 cup walnuts or almonds
Preparation:
In a blender combine all ingredients. Use the pulse button so you can still have small pieces of nuts throughout the dip. Serve with your favorite crackers or grilled pita bread.
